This is a really great low fat recipe I found a few weeks ago. It is very tasty!
Saucy Mussels
3-3.5 lbs live mussels (about 2 c. shucked)
a good handful fettucini or linguini
1 c. chicken broth
2 roma tomatoes, chopped fairly small
1/2 t. dried crushed basil
juice of 1 lemon
pinch crushed red pepper flakes
s + p to taste
cornstarch
-Clean and steam mussels if using live.
-Boil pasta. Meanwhile prepare sauce: in saucepan, bring to a simmer broth, tomatoes, spices and lemon. Add steamed mussels, then thicken with cornstarch mixed with a small amt of cold water.
-When pasta is done, drain and add sauce. Toss to coat and serve.
