Here is a tasty party idea:

BBQ chicken pizza

1 12-inch thin crust (purchased or made from mix)
1 cup BBQ Sauce
1 Chicken breast, diced
1 cup Low-fat mozzarella cheese
1/2 cup Onions, sliced

Preheat oven to 425 F.
Boil or bake chicken breast, chop into 1/2 inch pieces, marinate in 1/4 cup BBQ sauce.
Roll out dough to approximately 12 inches. Spread remaining BBQ sauce evenly over pizza, top with cheese, chicken pieces, and onions.
Bake pizza on lowest rack of the oven for approximately 20 minutes, or until crust turns brown and the toppings are hot!

Here is another healthy easy one:

BAKE YOUR OWN TORTILLA CHIPS


You've heard me say it before: Salsa makes an excellent snack for
anyone watching his or her weight. Salsa packs a huge amount of flavor
into very few calories, and it's loaded with vitamins besides.

Commercial tortilla chips, on the other hand, typically don't do your
diet any favors. So if you'd like to have chips with your salsa,
consider baking your own. It's simple. You just cut some corn
tortillas into wedges, place them on a cookie sheet, spray them on
both sides with nonstick cooking spray, such as Pam, and bake at 350
degrees for about ten minutes. If you like, you can sprinkle on a
little salt before you bake them.

For most brands of six-inch corn tortillas, a serving of three
tortillas contains about 140 calories and one to one-and-a-half grams
of fat.

Peach Salsa
Total preparation time: 15 minutes

Serves 8 Serving Size ¼ cup

3 medium peaches, peeled, washed, coarsely chopped
½ medium red bell pepper, washed, cored, seeded, diced fine
½ medium green bell pepper, washed, cored, seeded, diced fine
1/4 red onion, diced fine
1/2 jalapeno pepper, seeded, diced fine (optional)
¼ cup fresh cilantro leaves
1 tablespoon lime juice

Place all ingredients in large bowl; stir to blend well. Store in sealed container until ready to use. Makes 2 cups
