yes. when i make it i use low fat coconut milk in mine and only put half the amount in but add a teaspoon of cornstarch.

there is lower fat chicken or turkey sausage links.

I love curry and all East Indian foods. When I was young quite a few of our neighbors were from India and I loved eating in their homes...

This is just a short, sort of outline of how I make my chicken curry, I don't go by a recipe but everyone I have served it to has really enjoyed it.

boneless skinless chicken breast cubed and boiled. I boil it to keep fat content down, I just use enough water to barely cover the chicken.

1 large onion, chopped
4 celery stalks, chopped
4 potatoes, small cubes
3 large carrots, chopped
and flavoring

I use curry spice, garlic powder, pepper, saffron, coriander, cumin, chili powder, chicken oxo ~o) (whatever I can find) and then just adjust the spices to taste. If you keep the water content low the veggies will actually absorb the water. I have never had to add a thickener to my curries.

Another thing I like to add at time is slivered almonds.

I'm eating low carb so, for myself, I make this dish without the potatoes (kohlrabi instead), carrots and almonds and it still is very tasty.

If you have a trader joe's grocery store, they have a curry simmer sauce, its 90 calories per 1/2 of sauce and 5g of fat, I dice up some boneless skinless chicken and carrots and celery and onions and some squash or cabbage and serve it over steamed brown rice, its pretty good. Its a far cry from authentic but its actually pretty good when you really really really want some curry and if you go to the Indian Restaurant you'd blow it bad!
