Microwave English Muffin Bread -- Serves 12
2 cups PLUS 1 tablespoon flour
1 envelope active dry yeast
2 teaspoons sugar
1/2 teaspoon salt
1 cup LUKEWARM FAT FREE milk
1/4 teaspoon baking soda
1 tablespoon water
In a large bowl, mix the flour, yeast, sugar and salt. Pour in the milk; with a sturdy spoon, stir to form a very thick batter, then stir vigorously for 15 - 20 seconds (the batter will become very STRETCHY as you beat). COVER LOOSELY WITH PLASTIC WRAP OR A DAMP TOWEL and let the batter rise in a WARM DRAFT FREE PLACE until it doubles in volume about 45 minutes.
In a small bowl, DISSOLVE the baking soda in the water; add to the batter and STIR VIGOROUSLY until it becomes stretchy again.
Spray an 8 x 4 inch GLASS LOAF pan with nonstick spray. SCRAPE THE BATTER into the loaf pan; COVER LOOSELY WITH PLASTIC WRAP OR A DAMP TOWEL and let it rise in a WARM DRAFT FREE PLACE until it fills the pan about TWO THIRDS to THREE QUARTERS full, about 40 minutes.
Microwave on HIGH, UNCOVERED , until NO WET SPOTS remain ON THE TOP of the loaf, about 4 minutes. COOL in the pan for 10 minutes, then GENTLY but FIRMLY pull on the sides of the loaf to release it from the pan. Remove from the pan and COOL COMPLETELY on a rack. TOAST SLICES BEFORE SERVING.
