CARAMEL POPCORN - Makes 12 (1 Cup) Servings

12 cups POPPED Popcorn, UNSALTED, AIR POPPED
1/2 cup Brown Sugar Blend (Splenda)
1/4 cup LIGHT Corn Syrup
2 TABLESPOONS Margarine
1/4 teaspoon Salt
1/4 teaspoon Baking Soda
1/4 teaspoon Vanilla

Place popped popcorn in TWO 9 x 13 greased baking pans. PREHEAT oven to 250 degrees.

Combine brown sugar blend, corn syrup, margarine and salt in a HEAVY SAUCEPAN. Cook for 7 to 10 minutes. STIRRING CONSTANTLY; BRINGING MIXTURE TO A BOIL OVER MEDIUM HEAT. Boil for 4 minutes. DO NOT STIR.

Remove from heat. Add baking soda and vanilla. Pour over popcorn, STIRRING TO COAT EVENLY. Bake for 1 hour, STIRRING EVERY 15 MINUTES.

COOL ON WAXED PAPER. Break apart into pieces. Store in tightly covered container.
